Mushroom duxelles are a wonderful and versatile product to have on hand. It is one of the most flavourful preparations you can make and can be added to virtually any dish. Duxelles will keep in the refrigerator for a week and for several months in the freezer.
3 tbsp (45 ml) melted butter
Sauté the onions in the butter until they are soft and transparent. Add the rest of the ingredients and cook until they are well mixed. Continue cooking for 5 to 10 minutes, until all the liquid has evaporated and the mixture is paste-like. Let cool and store in a jar in the refrigerator or freeze in small containers. Makes about 1 cup.
